In April and May, guests at Vik Chile are invited to join the winemaking team. Head out after dinner with a headlight, scissors and gloves for some grape picking; carry your pickings to the winery and watch the grapes enter the wine making process. Guided by the wine experts, guests learn about the VIK winemaking philosophy, taste the newly pressed grape juice in the early stage of maceration, and sample the VIK wine during the process of fermentation. For those wondering, grapes are hand-picked after sunset as the day time temperatures (up to 30 degrees) change the sugar composition and nighttime picking ensures stable sugar levels in the grapes.
